After 3 years of being vegan, I still cannot eat tofu like that. What are those weird-shaped things?
@Amanda - those weird-shaped things are slices of lotus root.
How was the renkon (lotus root) prepared and seasoned? I have some in my fridge that I bought on impulse, but I haven't had any yet.
Lotus root like that makes great tempura, by the way. But tempura is not particularly health-sustaining, is it? :)
Salads are always a great choice. Yum!
