What's In My Fridge

I'm a single vegan chic with a job that has weird hours. Unlike a lot of the other vegan food bloggers, I don't spend a lot of time cooking or preparing foods. Nothing I make on this site, unless stated otherwise, takes more than 30 minutes, because I want people to know that being a vegan who eats healthfully isn't a hard thing!

So, these are the top 2 shelves of the fridge.
Top Shelf (from left):
Leftover Trader Joe's Punjabi Chole (aka Indian Food in a Bag)
From top to bottom in middle: Pre-packaged Black Bean and Wheat Pilaf, Baba Ganoush, and Hummus
Stir fry leftovers from Tuesday
Spinach spread

Middle Shelf:
Protein for sandwiches, wraps, or stir fries -- Tofurky, Seitan, and assorted mushrooms
Avocado -- great spread on pita bread
Polenta
Organic strawberries and blackberries
Arm n Hammer -- to keep the fridge from smelling funky

Other staples that I like to have on hand:
Natural peanut butter
Soy milk
A few stir fry sauces
Vegenaise
Ketchup (to mix with Vegenaise to make vegan Thousand Island Dressing, or to put on a veggie burger)
Barbecue sauce -- great on Chik'n Nuggets

Your spinach spread sounds yum.
Do you keep whole avocados in the fridge? I find they go brown that way?

Thanks for sharing what's in your fridge and pantry.

What brand of Chik'n nuggets do you use? Is it the Trader Joe brand or does another company have vegan ones?

I eat the Boca Chik'n Nuggets. They're vegan. I have yet to try the Trader Joe ones.

What a nice, neat fridge. Mine's a mess.

Your spinach spread does sound good. I'll have to try that. :)

And you're right, eating vegan is not hard. We just have lots of fruit and veggies in the fridge instead of meat based shtuff. ;)

I think the ones at Trader Joes are called Soy Nuggets. I make a dipping sauce for them of ketchup and horseradish (sort of a cocktail sauce) - Luv! I will definitely look for the Boca ones!!!

I like the look into your fridge. I eat Trader Joe's chikn nugs, and they are GREAT!!! My fridge is all over the place. And like you, i rarely blog about my eating/cooking for the same reasons!

Wow, your fridge is so neat and organized. The complete opposite of mine.

Neat idea though, you are right...being vegan doesn't require tons of cooking time.

Most of my cooking that takes longer than 30 minutes is done on weekends. I'll also make something later at night on a weekday and put it away for the next few meals.
