Bean Dip


Lisa gave me this recipe that she used recently for a bean dip. It came out good, and I used about half of the suggested amount of olive oil (in other words, 1/4 cup instead of 1/2).

2-15 oz cans black beans, rinsed
3 tablespoons fresh lime juice
2 cloves garlic
Salt
½ cup olive oil
¾ cup (to taste) fresh cilantro leaves

So glad you liked it! I find I actually enjoy it more the less oil I put in, so I'm going to keep playing with the recipe (which, I should add, came to me by way of my friend Pam).

The scary thing is, it gets better on the second and third days...and more addictive, too!

I love bean dips, different beans and seasonings! Black beans and lime juice - always great together... oh, and of course with cilantro - yum! Sad for those folks that don't like cilantro...

I think I did this dip once...if not this one something pretty darn close. I loved it!
