Brunch After a Long Run
I ran 10.6 miles this morning, burning about 1800 calories. At the end of my run, I was hungry!
The spinach is frozen spinach sauteed in olive oil, garlic, salt, and pepper. On the right is leftover mock egg salad. I have two organic waffles from Whole Foods, topped with Earth Balance margarine and maple syrup. With it, I have a bowl of strawberries and raspberries and a glass of orange juice.

Looks fab! after my 10 mile run this morning I tried the scrambled tofu recipe from "Vegan with a vengence" and threw hashbrowns in it.
Just found your blog. Looks great - I'll be checking back!!
Looks yummy. After a run like that, must take restraint to stop and take a picture before digging in :-)
Dang that looks good. It's almost midnight and I think I'm ready for breakfast right now! I went to a wedding today and they had strawberries in some kind of balsamic vinegrette. Yum. It was good. I think after that many miles I could eat two of those plates. : )-

Wow, what a run! Fantastic job, Vegan Doc. The food looks great as well!!
Looks great to me and a well-earned breakfast.
I've been on this kick lately where I want lunch and dinner type foods for breakfast instead of carbs like cereal and toast. Go figure.
mm waffles and strawberries are a GREAT combo
