Scrambled Tofu and Pancakes


These are Bisquick Light pancakes. I made them as instructed on the box, but instead of egg used Ener-G Egg Replacer and soy milk instead of cow milk.

The tofu scramble is made from extra-firm tofu that is crumbled, with some onion, spinach, and tomato, and a drop of canola oil. I cooked this up on the same griddle as the pancakes. The spices definitely made this creation delicious -- my choices are turmeric, paprika, cumin, coriander, sea salt, and a little pepper.

I love your website! Great healthy vegan meal ideas that are not time consuming at all. 2 questions:

1)Do you purchase the Ener-G egg replacer online, or at a store?

2) Also, I just noticed that the egg replacer is made up of alot of carbs...any recommendations for egg substitutes for a diabetic vegan? Thanks!

1) I buy the Ener-G egg replacer at the store. Where I live, Wegman's carries it. Check the natural foods section of your local grocery store.

2) True, the egg replacer is mostly carbs. However, you only use a teaspoon and a half of it for each egg substituted, and that would be 4 grams of carbohydrates, and that is really such a small amount.

Thanks, VeganDoc, for your reply! I'm going to add Ener-G to my grocery list. When I bake (which I love to do), I usually substitute 1 T of plain soy yogurt for each egg, but it works for some things, and not so well for other items (like nut breads, waffles, etc). I didn't realize the low carb amount in Ener-G...good to know. Thanks, and keep up the great blog!

I just discovered tofu scramble and love to have it for a weekend breakfast. I make my tofu mixed with salsa but I love your idea to throw in some spinach.
